Videos seem to work for me, I think we need some more details to find out what’s going on, here’s a set of details that may prove to be helpful:
a) Could you share the file which causes OpenLP to crash? b) Could you share us OpenLP debug log? https://manual.openlp.org/troubleshooting.html c) Could you export your OpenLP settings and share them? To do this, go to “File” menu, then “Export” > “Settings” d) Which version of Windows 10 are you using? 32 or 64 bit? What processor? This information can be found from “System” or “About your PC” in the Windows search. Note: Please don’t share your Windows Product ID. e) Maybe record a video and show us how to re-produce the bug or describe it step by step?
well after re-installing VLC and openlp, it worked OK. Then it played fine before the conference, but during the conference it started jerking again, most embarrassing to say the least. Tonight's latest issue is i can't add audio files to a service, comes up with unsupported type. Getting to be a pain now and sadly might be time to change software.

@Mark Thompson, answer what you can of Azaziah's request, and also tell us what your hardware is, especially RAM, CPU, and video card.
When running in debug mode videos work perfectly, but normal mode, jerky. I'm using VLC 2.2.8
i did a video of the issue, but it won't let me upload it.
Worst case scenario, you can use VLC on its own to display video, and switch back to OpenLP for everything else. (But I hope it won't come to that.)
